Hot Fudge Cake

I like to follow the 80/20 rule. I  try to eat healthy 80% of the time for the body,  but that 20% is saved for comfort food that my soul truly enjoys.  To me, there is nothing better than a pan of warm, gooey, chocolaty goodness, that is this cake.  The ingredients are easy to keep on hand so you can make this on a moments notice.

Hot Fudge Cake

Preheat oven 350 degrees
Mix:
 1 1/2 cups white sugar
 2 cups all purpose flour
6 tbsp. cocoa
4 tsp. baking powder
1/2 tsp. salt
Blend:
1 cup of milk
2/3 melted butter
3 tsp. vanilla
Pour dry ingredients in the blended milk, butter and vanilla. Beat until smooth, pour into a 9'' x 13" pan.
In a small bowl combine:

1 cup sugar
1 cup brown sugar
8 tbsp. cocoa
and sprinkle over batter.
Pour 2 1/2 cups of hot water over cake. DO NOT STIR. Bake 40 minutes or until center is almost set.  Let stand 15 minutes.  The fudge is on the bottom.  When serving you may want to flip the slice over.  Great with whipped cream or vanilla ice cream.
